Introduction

Number of Servings: 8

Ingredients

    *Yams, 4 cup, cubes
    Apples, fresh, 2 cup, quartered or chopped
    Celery, raw, 2 cup, diced
    *Purple Onion, 0.25 cup
    *Raw White Onion (Serving = 1 medium Onion), 0.25 serving
    *Sage, ground (spice) 1 tsp, 0.50 tsp
    *Parsley, dried, 1 tsp
    Olivari Mediterranean Olive Oli Clasic, 2 tbsp
    *Kosher Salt, 0.25 tsp
    *Black Pepper (Ground), 0.25 tsp

Tips

You can also use yams with a combo of sweet potatoes ( that are white) look like a normal potato but are "real" sweet potatoes (not yams) the combo of yams & real sweet potatoes are wonderful !

I use red apples.


Directions

Chop up yams, apples (peeled), celery & onions.

Bring pot of water to boil. Boil celery for 3 min. then add yams for additional 2 min (w. celery still cooking).
{SALT WATER FOR BOILING}
Drain & put on a cookie sheet to cool for 15 min.

Meanwhile-saute onions 1 TBSP of EVOO (olive oil)

(make sure pot is big enough for all ingredients)

Once onions are clear/translucent add the yams, apples & celery to the pot. Add parsley, salt & pepper-mix up & push in a flat layer.

Cook for 10 min. -15(turning/mixing the veggies every 2 min.) until start to caramelize or get soft (yams).

Add sage

Put in bowl & add salt & pepper if desired to taste.

Server warm.
