Ingredients

    2 15-oz cans pumpkin puree
    2 large apples, peeled, cored and chopped
    2 tsp. cinnamon
    1/2 tsp. nutmeg
    2 tsp. vanilla extract
    2 Tbsp. almond milk, cow's milk or coconut milk
    1/4 cup stevia
    32 oz. plain Greek yogurt
    1 3/4 cups granola

Tips



Directions

Place apples in a food processor; pulse until smooth. Transfer to a large bowl. Add pumpkin, cinnamon, nutmeg, vanilla, choice of milk and stevia. Mix well to combine.

Layer pumpkin mixture and yogurt into 12 glasses. Sprinkle with your favorite granola and serve.

Serving Size: makes 12 cups

    It was fabulous!!! I substituted 1 cup dried oatmeal mixed with 2 Tablespoons buttery spray, 3 pqckets stevia & 1/4 cup raisin/dried cranberry mixture instead of granola. It was fabulous - 4/20/13

    This recipe looks fabulious but stevia and I don't get along! It makes feel REALLY thirsty even after I've drank 12+ cups of water. However I think that by using the stevia is what allows this recipe to have so few calories. I don't know what I could substitute the stevia with to keep the calo. . - 4/20/13

    It was very good. I am single so I cut the recipe to 1 serving. Didn't have granola so I sub.

    Correction needed on the yogurt, I think. The ingredients list 32 ox. So Delicious Dairy-Free Plain Greek Style Cultured Coconut Milk

    I'm assuming that is the yogurt? I don't know the brand, so I'm not sure. I'm not sure how everyone else was able to make the recipe and rate it.
