- 3 whole wheat English muffins, split (6 halves)
- 1/2 cup pizza sauce
- Pizza toppings (choose any 3):
- grated carrots
- sliced mushrooms
- chopped broccoli
- pineapple chunks
- chopped green or red peppers
- sliced zuchini
Directions
1. Spread about one tablespoon sauce on each muffin half.
2. Arrange your favorite toppings on the "crust" in a single layer. Use at least three colors.
3. Sprinkle one tablespoon cheese on each pizza.
4. Place pizzas on a baking sheet and bake at 350° F for 10 minutes, or until cheese is melted.
Makes 6 pizzas.

I've been making these for years and years and I like to make them with bagels or the new bagel thins because I like the texture better than that of English muffins. I have tried the new sandwich thins as well but I still like the bagels the best. Bagels hold the different toppings real well too. - 10/3/11

WAY too many calories here. A serving size is 1/2 an english muffin, you can't eat just one serving....you got to be kidding me. I did make this for my kids when they were younger, they would eat 6 serving; I would eat 4-5. This would be a nice side to a low calories soup or salad though.

I do something similiar, but use tortillas..the small ones. It makes a yummy, thin crust, and you can still use minimal sauce. I might put a little more than just 1Tbs cheese, but still better than a real pizza. Briefly sautéing the veggies draws moisture to prevent sogginess. Add salad-makes a mea - 12/26/08
