Introduction

When you're craving something crunchy but don't want the added fat, whip up a batch of these chips. When you're craving something crunchy but don't want the added fat, whip up a batch of these chips.
Number of Servings: 4

Ingredients

    1 large baking potato
    pinch dried thyme
    pinch free-flowing salt*
    pinch black pepper


    * Free-flowing salt is finer than table salt, so a little goes a long way. If you don't have free-flowing salt, grind regular salt in a spice grinder until it's powdery.




Tips

Feel free to change up the spices or seasonings. Cayenne pepper, garlic powder, or rosemary will all work well with these chips.


Directions

Using a knife, the slicing blade of a food processor or a mandoline, cut the unpeeled potato into 1/16-inch slices.
Soak the potato slices in a bowl of cool water for a couple of minutes to remove excess starch, which will help get the chips crispy.
Drain and rinse the potatoes, then pat them dry.
Place a sheet of parchment atop a microwave-safe plate. Layer the potatoes on the plate, taking care not to let them overlap.
Mist the potatoes with cooking spray, then sprinkle the thyme, salt, and pepper over the potatoes.
Microwave on high for five minutes. Let the potatoes rest for one minute, then cook for another four minutes. Remove any chips that are light brown and cook the remaining chips, if necessary, for one more minute.
Repeat with the remaining potato slices, using more parchment. Cool completely before storing in an airtight container.

OVEN INSTRUCTIONS: Bake for 20-30 minutes (or until they reach the desired crispiness) at 450 degrees F on a baking sheet lined with parchment or atop a wire rack.

Serving Size: Makes 4 servings, approximately 10 chips per serving.

    I have a chip cooker for the microwave-it is very good. I slice up pumpkin, sweet potato, beets, and normal potato, so very nice to have chips without all the oil. Good kitchen stores have these chip cookers - 8/8/13

    "Free flowing salt" is sometimes called "Popcorn Salt" and you might find it in the popcorn aisle rather than with the rest of the salts and spices. - 7/11/14

    I bought this gadget that you can cook chips in the microwave. I seen it on TV & bought it in Bed Bath & Beyond. It's really cool & chips come out great. I have done sweet potato & regular chips. I am looking forward trying this seasoning on my next batch. - 8/8/13

    It would be very helpful to have 2 photos, one of the folded paper bags without the potato slices and another with them, to make it easier to picture how it works. In any case, I think I'll follow the advice below and buy a microwave chip cooker. Great idea! I'll try this soon. - 8/8/13

    interesting - wouldn't it be easier to just put them on a baking sheet in the oven and turn them once - the brown bag seems like a lot of extra work. - 8/8/13

    I sliced mine very thin with a veggie peeler, and only had to cook for about 3 minutes. Take them off the parchment (I used wax paper) as soon as they will come off or they'll stick. Careful not to over season - you don't need to blanket them in whatever you're sprinkling! This hit the spot. :-) - 4/30/16

    Be really, really careful using this recipe. I tried it, the potatoes overheated, and shorted out my microwave. My bad for not watching closely enough but potatoes can get extremely hot and burn. - 8/19/14

    So I tried it both ways (microwave and oven on a rack) and it seemed that they turned out better for me in the microwave. Using the temp given for the oven and the lesser amount of time given, they burned to a black crisp. Will try again at a later date and will be sure to lower the temp. - 7/23/14

    I tried the microwave and parchment, didn't turn out as a even crisp as I like,somewhat softer in the center of the chip, when I microwaved them a little longer the ends "burnt"..may look into one of those chip cookers next time I'm at the mall. - 3/21/14
