Number of Servings: 10

Ingredients

    Roll
    1 1/2 lbs. extra lean ground beef
    (leanest meat I use turkey too)
    3/4 cup italian style bread crumbs
    1 egg
    1 tsp. sal
    1/5 tsp. pepper

    Topping
    1 cup Spaggetti sauce
    1/2 Tbs. mozz. cheese

    Filling
    1 package 10oz Spinach ( I cook it fresh lightly)
    1 1/2 Cup Mozz. cheese
    1 tbs Italian seasoning
    1/4 salt
    1/3 tbs garlic powder

Directions

Heat oven at 375
In a bowl mash beef,crumbs.egg,salt,pepper.
take wax paper and flatten 1/2 inch rectanlge shape

For filling.
saute fresh spinach in a pan lightly olive oil. just till it starts to shrivel.
let cool in a bowl compine, mozz. cheese, italian seasoning, salt, garlic powder, spinach. mix with spoon.
Spread filling evenly on flattened meat.
Roll the long ways of rectangle.
Lift carefully and put inside bread pan.
cook for 1 hour
The last 5-7 minutes at spaggetti sauce, then sprinkle with mozz. chesse

Let cool 5 minutes.
Cut into 1 inch -1.5 inch pieces.
For a side dish bake zuccini
And love it!!!!!

    This was great!!! I used ground turkey instead and added a half cup low fat ricotta cheese and only used a cup of the ww reduced fat mozarella cheese. If using the turkey i recommend shortening the cook time to make sure it doesnt dry out.... EXCELLENT! WILL MAKE AGAIN! - 3/20/08

    I used Shady Brooks Italian Seasoned Lean Ground Turkey and made my own bread crumbs from a recipe from Martha Stewart. I left out the spaghetti sauce. The changes I made cut over 100 calories off of this recipe and removed onions due to allergies. This went over really well with my whole family. - 10/1/13

    This was excellent!!! Added some fresh sliced mushrooms and onion with the spinach when I was sauting it and added a little more spices, oregano and basil and more garlic. I will definitely make this again! - 7/12/10

    This is a lot like I make, and it looks like in the pic their are carrot strips in it, but it isn't a listed ingredient. ? I add them, fresh garlic and onions too. Would of gave 5 stars but I changed it a lot. - 3/14/13

    I just made this for dinner tonight & it was DELICIOUS! We are growing silverbeet/chard so I used that & didn't have mozzarella so I subbed a little feta & tasty cheese. I also left out the tomato sauce & cheese on top; definitely making this again but I'll stick with my cheese combo! - 7/21/12

    I made this last night and followed recipies almost exactly, except i used minced garlic in the meat and filling instead of garlic powder because I was out.     Best idea for a meatloaf and the best I have made. I adapted a bit using turkey and eggwhite, more Italian seasoning, 1/4 cup seasoned panko for 1 pound of turkey, and roasted chopped mushrooms (4 oz) filling used 2 laughing cow wedges, Tuscan seasoning, and swiss chard, 1 tab grated parm.     This was a good recipe however my meatloaf came out a little bland and I seasoned it beyond what the recipe called for. I'll have to switch up the spices next time to see if I can jazz it up a bit. Otherwise it was still a good edible meal!! - 12/29/09

    This tasted amazing. I used ground moose meat which is very low fat so it tends to be dry a lot of time and is difficult to make a good meatloaf with. That was not the case with this recipe. It was super moist and very delicious. - 12/4/09
