Ingredients

1 package (6.3 oz) Gorton's Classic Grilled Salmon Fillets
    1 onion, chopped
1 tsp olive oil or butter
    6 eggs, beaten
    salt & pepper to taste
    1/2 tsp dried tarragon
    2 Tbsp chopped fresh parsley
1/3 cup freshly shredded Parmesan cheese

Tips

Gorton’s Recipe Renovation Contest 2nd place winner, submitted by Joni H. of Rocklin, CA.

Directions

Remove fillets from box and microwave for 1 minute to soften slightly. Cut into bite-sized pieces.

In a large, oven-proof skillet over medium high heat, saute salmon pieces and onions in olive oil until salmon is opaque.

Pour in eggs, seasonings, and herbs. Cook until edges are dry, slipping spatula under frittata occasionally to allow uncooked egg mixture to flow beneath.

While set but still glossy, sprinkle with Parmesan and slip under broiler to brown top slightly. This makes a great dinner OR breakfast.

Serving Size: 1/6 frittata

I used Spinach and cooked it in 3 small Pyrex bowls so much easier to potion for just the two of us. Thanks Pat in Maine. - 1/20/14

How much onion should I use to sauté with the salmon? I also like to finely chop garlic in everything! - 1/28/14

There are no Onions listed under Ingredients, but, under the Directions it says to saute the salmon with the onions.
Could you add the amount and type of Onions used in this Salmon Frittata Recipe?
    Thanks!

Love fritatas for dinner, but will try it with chicken. Probably will change the herbs to go with the chicken. Thanks for the base recipe! - 1/28/14
