Ingredients

    1 lb chicken breast (can still be frozen & whole)
    1 can kidney beans, drained
    1 can black beans, drained
    1 can no salt added diced tomatoes, undrained
    1 cup low sodium chicken broth
    1 cup salsa
    1 tsp chili powder
    1 tsp cilantro
    1 tsp garlic powder
    1 cup brown minute rice

Directions

Add all ingredients except rice in crock pot. Cook on low 8hrs. After 8hrs stir to break up chicken breast. Add rice, cover let cook additional 5 min. Serve topped with sour cream & shredded cheese, if desired.
Makes 9 -1 cup servings
**note**
If using thawed chicken or diced chicken, reduce cooking time to 5hrs. I put mine in whole & frozen so it's just right when I get home from work.
