Ingredients

    1 serving cooking spray
    1 med. onion, finely chopped
    4 med. garlic cloves, minced
    45 oz canned black beans, undrained (three 15 oz. cans
    1/2 tsp red pepper flakes, or to taste
    1 tsp ground cumin
    14 1/2 oz fat-free chicken or vegetable broth
    10 oz canned tomoatoes with green chilies
    11 oz canned yellow corn

Directions

Coat bottom of lg stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft but not brown, about 5 mins. Place one can of beans in blender; add sauteed onion mixt., red pepper flakes and cumin. Cover and blend on high until smooth, about 30 secs. Pour mixt. back into stockpot. Place second can of beans and broth in blender and puree until smooth; add to stockpot. Stir third can of beans (do not puree first), tomoates and green chilies, and corn into stockpot. Bring to a boil, lower heat to medium and simmer for 20 to 25 mins. Yields about 1 1/2 cups of soup per serving.

    This soup is very tasty and filling .I too used frozen corn as it is less sweet. Next time I will add chopped celery with the onion. - 12/8/08

    This is the best black bean soup I have ever tasted! I had a little left over pork loin so I chopped that up and threw it in. I also didn't puree anything except the beans. I used tomatoes and corn that I grew and preserved instead of canned varieties.
    I will make this over and over again.

    Very tasty! I used a pound of dry black beans and soaked overnight, rinsed. Then cooked everything in the crockpot. Added half of a poblano pepper because I had that to use up in the fridge. I also added a can of diced tomatoes along with the 10oz can of the tomato/green chili ingredient. - 5/18/20

    I started with a lb of dry beans and added extra broth. I added 2 sticks of celery and a lb of andouille sausage (fried and drained). My cans of corn and tomatoes were the standard 15-oz size. I used a crock pot. The result is excellent! It took longer, of course. - 3/7/19

    This soup is very tastey, indeed! I used the beans I had in my pantry--black beans, tri-colored, and red. Also, I drained and rinsed the last can of beans so maybe that's why I only got six 1-1/2 cup servings instead of eight? Anyway, I live alone so that was no biggy. :) - 11/10/13

    Very Good. Everyone enjoyed. Cut back on some of the spices for the kids and did not use cumin, used 1/8 tsp red pepper flakes, 1 clove of crushed garlic, only pureed the one can of beans, used frozen corn (cooked), and thickened with a little corn starch. Salt and pepper to taste. - 2/12/12

    This is pretty tasty! I think next time I would only puree one of the cans of beans.
    I prepared it as the recipe called for, but then I put it all in the crock pot and let it simmer for a few hours. I served it with cornbread. I'd make this again, and maybe add jalepenos for more spice.

    Sooo good - reminds me of the black bean soup at panera, only more colorful. I only pureed the first can of beans since I like a chunkier soup, and only used 1 c. of broth. I topped it with a spoonful of fat free cottage cheese. Delicious, inexpensive, and easy - will definitely be a regular. - 9/20/08
