Give it a kick by adding 8 tbsp of rum if youd like.

Ingredients

    6 eggs
    1/4 cup sugar (or substitute)
    1/4 teaspoon salt (optional)
    1 quart low-fat milk
    1 teaspoon vanilla extract

Directions

1. In large saucepan, beat together eggs, sugar and salt (if desired); stir in 2 cups of the milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160 degrees F (70 degrees C). Remove pan from heat.
2. Stir remaining 2 cups milk and vanilla extract into the mixture. Cover and refrigerate until thoroughly chilled; several hours or overnight. Just before serving, pour the egg nog into a bowl or pitcher.

Makes 12 (1/3 cup) servings.

    Note that 8 tbsp = 1/2 cup. It may be easier to measure out a half a cup of rum than 8 tablespoons.

    I make a recipe similar to this, but use all the milk and just egg yolks. After thickened and cooled, whip the egg whites until soft peaks form when you lift the beaters. Then fold them together. This looks beautiful in a punch bowl, sprinkled with nutmeg! - 9/20/11

    remember going with my parents at the holiday time and getting served home made egg nog hoping this tastes the same
    Just a note to others look at the serving size 1/3 of a cup that is not much and a cup would be 300 calories
