Introduction

Ingredients

1-1/2 c. white flour
1 c. white sugar
1 tsp. baking soda
3 small very ripe bananas, mashed
1/2 c. canola oil
2 eggs
1 tsp. vanilla extract
*Optional: add 1/4-1/2 c. chopped walnuts for banana nut bread/muffins!
Directions
*Makes 1 loaf, or 12 muffins (Serving size= 1/12 recipe*
1. Preheat the oven to 325 degrees Fahrenheit.
2. Whisk together the dry ingredients (flour, sugar, and baking soda) in a bowl.
3. Combine the wet ingredients (the bananas, oil, eggs, and vanilla) in another bowl.
4. Stir the dry ingredients into the wet ingredients and mix until the batter is well combined. If making banana nut bread/muffins, stir in the chopped walnuts.
5. Pour the batter into a coated (with nonstick cooking spray) loaf pan or muffin tins (liners are recommended).
6. If making a loaf, bake for one hour. For muffins, about 20-25 minutes should be fine.
7. Once the bread or muffins are ready, DIG IN!
Great for breakfast, snack time, dessert, or any time of the day!
*I know this is not a very healthy recipe, but it's an AMAZING indulgence that takes no time to prepare! (Don't forget about the lower calorie one I also posted though!)

Just made them for the third or fourth time for my students and staff at school, last time I posted on facebook, one of the social workers was down my wing 3 times! The kids say they are "fire" the new term for good . I make them with only a half a cup of sugar and all are happy with them. - 3/12/19

These were very good. I have a gas stove and am not sure if it makes a difference, but 325 was a bit too hot for them. I was distracted and wasn't paying much attention so they ended up a bit dry (I made muffins and bread... the muffins turned out better)... operators error!! haha... thanks! - 8/28/08

I thought that it was really really good! I made three mini loaves and had them bake for 40 min each. I think that next time I make this however, I am going to add a tsp of salt. VERY GOOD!! Thanks for helping me get rid of my ripe bananas!!! - 4/20/08

Sorry, 1 tsp. of salt was actually in the recipe, but I haven't put salt in my food for years (I grew up with a mother with VERY high blood pressure). :) I'm sure salt would be a lovely addition, I'm glad you enjoyed the bread.
