Ingredients

    8 oz chicken
    1 med red pepper
    3/4 cup chopped mushrooms
    2 medium celery stalks
    1 small onion
    2.25 ounces peanuts
    4 tbsp corn oil
    1/2 cup chopped carrots
    1/2 cup chopped broccoli
    1 tsp tamari
    2tbsp peanut butter

Directions

1. Chop all veggies and chicken into bite-size pieces.
2. Combine peanut butter, tamari, and 2 tbsp oil in separate dish and set aside.
3. Stir fry veggies with 2 tbsp corn oil until tender.
4. In a separate frying pan, toast peanuts.
5. Once nuts are browned, add chicken. Stir occasionally until chicken is cooked.
6. Pour tamari mixture into chicken and mix until chicken is well coated.
7. Combine chicken mixture and veggies.

Serve over rice or pasta. Makes approx. 5 servings (1 cup/ 4 oz).

    Yum, yum, yum!!! I used canola oil instead of corn oil, and soy sauce instead of the tamari and it was great! I also use a bag of frozen stir fry veggies instead of fresh when I'm pressed for time. - 6/23/08
