Ingredients

    1 lb Pork Tenderloin, sliced into 8 pieces
    2 t lemon pepper seasoning
    2 T Light Margarine
    6 t lemon juice
    1 T Worcestershire Sauce
    1 t Dijon Mustard
    1 T Parsley

Directions

Makes 4 servings (1/4 lb apiece)

Slice tenderloin into 8 pieces. Sprinkle both sides of each medallion with lemon pepper. In a large skillet, cook pork in light margarine for 5-7 minutes per side or until cooked through. Remove the pork from the skillet.

In the same skillet, stir in lemon juice, Worcestershire, and dijon mustard. Cook until heated, scraping up the brown bits. Pour sauce over the meat. Sprinkle with parsley before serving.

    O.K.
    Although the recipe is quick & easy to make, my family was not impressed. I tried using the recipe with thin cut pork chops instead slicing a whole pork tenderloin. Maybe that was the difference- the pork chops were too thin. Flavor seemed to be way overpowering. - 7/6/10

    This is great. The sauce is excellent. I used my George Foreman grill to cook the chops. I scraped the grill into the sauce ingredients and then cooked it for about 45 seconds in microwave. My husband said it was the best pork chop he had ever eaten. - 7/17/08
