Ingredients

2 boneless, skinless breasts
1 bottle I Can't Believe It's Not Butter Spray
2 cups Kellog's Corn Flakes Cereal
1 tsp salt
1 tsp pepper
Other spices, optional. * I have used garlic, basil, red pepper flakes, cumin, and rosemary...all with good results!
Directions
Preheat oven to 350 F.
Use rolling pin or plastic bag to crush corn flakes to fine crumbles, and mix in salt, pepper & any other spices.
Spread corn flake mixture onto a flat surface.
Slice chicken breasts in half to your preference.
Spray each half with butter spray, lightly coating each side evenly.
Roll chicken breasts into the corn flake mixture, coating them evenly.
Place in a shallow baking pan or flat cookie sheet, and bake until internal temperature reaches at least 165 F, or about 40 minutes.
Serves 4.

I just made this recipe and it was amazing. I used seasoned salt, pepper, onion and garlic powder. As yummy as it was it might not make great leftovers. We let ours sit for about ten minutes before eating and they were a little less crispy than they were fresh out of the oven. Overall, five stars! - 8/2/10

Made this for supper tonight using the extra spices. Was very delicious. The only change I made was that I used Pam (instead of the butter spray) on a parchment lined cookie sheet. I don't think substituting the pam made much of a diff to the outcome of the recipe....Added to my recipe book.... - 5/3/14

i made this tonight. i had a whole cut up chicken and i took the skin, extra fat off. i was really surprised at how crunchy it turned out. i seasoned it with alot of different things, so it wasnt bland at all. my husband is a "red meat" guy, and not into anything healthy, and he gave it 4.5 stars! - 7/22/09

My mom made this recipe quite often when i was growing up. It is called "Oven Fried Chicken" She used a whole chicken, skin on, dipped in 1 egg and then coated with cornflakes. She used a bread bag to shake the coating on. The underside is always soft due to contact with the pan. We enjoyed it. - 4/25/09

I printed this recipe and my wife went out an bought some cornflakes and the recipe was on the box that was the same with the addition of 1 egg and 1 cup of milk to add to the seasoning before you roll in the crushed flakes and then make 3 lbs of chicken. I did this and used less than that. Great. - 8/4/07
