Introduction

This is a delicious easy potato salad that I have been making for a year and bringing to every barbeque I've been to. This is a delicious easy potato salad that I have been making for a year and bringing to every barbeque I've been to.
Number of Servings: 12

Ingredients

    2 lbs of red potatos, diced
    6 slices of turkey bacon, cooked crisp and crumbled
    3 shallots, chopped
    1 cup fat free sour cream
    1 cup light mayonnaise
    1 cup shredded cheddar cheese
    1 tbsp of Old Bay seasoning

Directions

1. In a large pot, bring water to boil. Add diced potatoes and cook for about 20 minutes, until tender.
2. Meanwhile, in a large bowl, combine mayonnaise, sour cream, bacon, shallots, cheese, and seasoning. Stir to combine.
3. Drain potatoes and rinse with cold water. Allow to cool for about 5 minutes. Stir potatoes into mayonnaise mixture. Cover tightly and refrigerate.

    The best potato salad ever. I made this for Memorial Day 2010 picnic and it was a big hit. It was the only side dish that was gone at the end of the night. - 6/1/10
