Introduction

Delicious cod! Delicious cod!
Number of Servings: 4

Ingredients

    3 tbsp flour
    3 tbsp cornmeal
    1/4 tsp onion salt
    1/8 tsp pepper
    2 tbsp butter or margarine
    1 lb Alaska Cod fillets, thawed
    1/4 cup grated parmesan cheese

Directions

Combine flour, cornmeal and seasonings. Melt butter in shallow bakng dish. Dredge cod in flour mixture, place in dish. Turn cod to coat with butter; sprinkle with Parmesan cheese.

Bake at 450 F 8 to 10 minutes or until cod flakes easily with a fork.

Makes 4 servings.

    Used bread crumbs instead of corn meal & I only had onion powder, not salt, so I added Morton's Nature's Seasons (in place of the onion salt & pepper). I also added some paprika and a bit of parmesan to the breading. This got RAVES from my family. My hubby says it tastes like restaurant food! - 8/27/09

    This dish was TERRIFIC. It is my new Cod recipe. I cut the cod up into 4 oz portions and used Earth Balance Buttery Spread instead of butter. I didn't have onion salt so I used garlic salt. We ate it this with a third cup of whole wheat pasta and a cup of steamed asparagus. - 8/10/09

    I made this, but use Tilapia instead of Cod. It was easy,a nd the whole family enjoyed it. I may spice it up with some paprika or other seasoning next time. - 6/19/08

    I don't know what happened, but this was very blah for me. The crust never got crusty and the flavor was very plain to me. I even added paprika and garlic. I may fiddle around with things a bit. Maybe it was something on my end. Nonetheless, both my 18month old son and me both finish ours. :-) - 9/19/10

    My husband and I both liked this recipe. I'm just getting him to eat more fish and this recipe is a keeper. I used chopped onion instead of the satl, added some parm to the breading and used I can't believe it's not butter. - 3/5/10

    I added 1/8 teaspoon of cayenne pepper and one teaspoon of paprika I set 6 inches below broil for 5 minutes, turn broiler off and let it set another five minutes. I set fish on aluminum foil sprayed with oil. Bottom of breading on fish was mushy. Maybe no spray next time. - 12/19/18

    I loved this recipe. I made some slight changes though. I used Olive Oil instead of butter, Whole wheat flour instead of flour. Garlic powder instead of onion salt. Panko bread crumbs instead of corn meal. halibut instead of cod. And lastly Romano cheese instead of parmesan. grilled it. - 2/12/18

    As with most any "oven-fried" dish, it will never achieve the crispy outside the way a fryer does. But the health benefits far outweigh the satisfaction of biting into a crisp crust on the outside of your fish. That being said it was an easy recipe... and the family liked it! Thanks! - 7/11/15

    Not sure what I did wrong but mine never got crusty or golden (maybe because I didn't have fresh grated parmesan so I had to use parmesan/romano from a jar (typically used by my boys for spaghetti, etc). It was a bit bland but pretty good overall. Will try with additional spices next time. - 2/4/14

    Tasty! Mine didn't get near as browned as in the picture, but it was still good and my husband liked it. I added paprika to my flour mixture as I saw other reviewers suggest. It took about 12 minutes to bake. Will definitely make it again! - 1/5/14

    I really really wanted this to taste good, but wasn't the case. I didn't have and cornmeal, so I used flour like some of the other commentors said. Wasn't the same. My crust never got hard, so it was just cooked fish with a mushy top. Still okay to eat, but will have to follow directions next time. - 2/7/13

    This tasted good, but my crust on top didn't get crispy. I didn't have onion salt, only powder, so I used that along with a little seasoned salt. I'll try it again with some other seasonings, such as Mrs. Dash or the like. This would work with many types of fish. - 1/21/10
