Ingredients

3 tbsp flour
3 tbsp cornmeal
1/4 tsp onion salt
1/8 tsp pepper
2 tbsp butter or margarine
1 lb Alaska Cod fillets, thawed
1/4 cup grated parmesan cheese
Directions
Combine flour, cornmeal and seasonings. Melt butter in shallow bakng dish. Dredge cod in flour mixture, place in dish. Turn cod to coat with butter; sprinkle with Parmesan cheese.
Bake at 450 F 8 to 10 minutes or until cod flakes easily with a fork.

Used bread crumbs instead of corn meal & I only had onion powder, not salt, so I added Morton's Nature's Seasons (in place of the onion salt & pepper). I also added some paprika and a bit of parmesan to the breading. This got RAVES from my family. My hubby says it tastes like restaurant food! - 8/27/09

I don't know what happened, but this was very blah for me. The crust never got crusty and the flavor was very plain to me. I even added paprika and garlic. I may fiddle around with things a bit. Maybe it was something on my end. Nonetheless, both my 18month old son and me both finish ours. :-) - 9/19/10

I really really wanted this to taste good, but wasn't the case. I didn't have and cornmeal, so I used flour like some of the other commentors said. Wasn't the same. My crust never got hard, so it was just cooked fish with a mushy top. Still okay to eat, but will have to follow directions next time. - 2/7/13
