Introduction

This is a slimmed down version of one of my favorite party foods--cheese fondue. Mashed cannellini beans slim down the recipe but keep a thick and luscious texture! Ingredients

    8 ounces Gruyere cheese, shredded
    8 ounces reduced-fat Swiss cheese, shredded
    1 t Dijon mustard
    1 c dry white wine
    1 can (15 ounces) cannelini beans, rinsed and drained (Cannellini beans are white kidney beans.)
    1 large clove of garlic
    1 T lemon juice

Tips

Ceramic fondue pots are better for cheese fondue; use metal pots for chocolate fondue.


Directions

In a food processor, combine the beans, the mustard, garlic, lemon juice and half the wine. Process until smooth.
Heat mixture in saucepan until simmering. Add remaining wine, then add 1/4 of the cheese at a time, stirring well to ensure it melts before adding more cheese.
Once cheese has melted, transfer to your fondue pot or a crock pot set to low. Makes 12 servings (1/4 cup)
Serve with blanched broccoli, cauliflower, asparagus, or carrots; chunks of whole-grain bread and breadsticks; grilled chicken or turkey chunks; or raw mushrooms, pepper strips or cocktail onions. (Add-ons not included in calorie count!)

    This recipe was incredible. We had it last night with broccoli and apples and some really heavy whole grain bread. I thought it was the best fondue I've had in a LONG time. - 7/18/10

    I had my daughter's inlaws to be over to plan the wedding and they tried to get me to make this for the rehearsal. It was good but not to try and make with everything I have to do the day before the wedding. I promised I would make it again in two weeks when they come again. It was so tasty. - 4/1/10

    Good concept. I'd probably sieve the pureed beans to make for a smoother mixture--though that would reduce fiber; if I ate it mostly or all with fresh vegetables, I wouldn't worry. - 4/1/10

    I appreciate that the sender was trying to reduce calories (hence vegetables instead of bread), and it may well be quite tasty, but it's a dip: you CAN'T call it Fondue! - 4/1/10

    Not sure of the real nutritional info. The info box doesn't match the recipe. Box info is based on it making 8 servings. Recipe says 12 servings at 1/2 cup ea. Guess I could do the math if so inclined. Also hope those making cheese substitutions remember to adjust the numbers as well. - 2/2/15

    Whole family loved this. Kids had no idea it had the beans in it. Halved the recipe with no problem and added a tablespoon of blue cheese. Also subbed 2 oz low fat cheddar for 2 oz of swiss to give it a more cheesy color. Fast and delicious. Will make again. - 1/7/13
