Ingredients

    1/2 cup dry oatmeal
    1/2 cup low fat cottage cheese
    1 tsp vanilla extract
    4 egg whites
    1 packet Swiss Miss Sensible Sweets Diet Hot Cocoa
    1 Tbsp Better'n Peanut butter original (or I'm sure your favorite PB would work just fine!)

Directions

Preheat skillet on high.
Mix all ingredients in your blender until smooth.
Spray skillet and cook just like "silver dollar" pancakes, a few at a time.
Number of pancakes varies depending on how large or small you make them.
Yields one serving.

    these are so good! i used cocoa and sugar instead of mix- didn't have any. the texture is a little different... definitely not like a regular pancake... but when made in little silver dollars, a nice treat! and those nutritional facts are really quite wonderful. :) - 4/23/11
