Introduction

This soup is so versitile. I wind up tossing in whatever vegetables I need to use up and it always tastes good. Sometimes I add a bit of hot sauce for a kick.

A serving is about a cup, just perfect to pack for lunch with a half sandwich.

Ingredients

    1 T extra virgin olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    2 carrots, peeled and chopped
    2 stalks celery, chopped
    1 can reduced sodium diced tomatoes
    1 c. reduced sodium chicken broth
    2 c. reduced sodium V8
    1 can reduced sodium black beans, drained and rinsed
    1 can reduced sodium red kidney beans, drained and rinsed
    1 T dried basil
    1 tsp. dried oregano
    freshly ground pepper, to taste
    1/4 c. parsley, chopped
    2 c. baby spinach, stems removed

Directions

Saute onion and garlic in olive oil until soft. Add carrots and celery, saute for 5 minutes or until celery is slightly soft. Add remaining ingredients EXCEPT parsley and spinach.

Simmer until carrots are tender, add parsley and spinach. Simmer until spinach is wilted.

    A lot better than I expected it! You can add whatever leftover veggies you have.: threw in some green pepper & green onions, used veggie broth instead of chicken, used White beans instead of red kidney beans. I just think it may have needed a little more spice, so I'll kick it up a notch! - 1/18/10

    Just finished making this soup - it was SUPER easy and I love that you can just throw anything in - i love spicy so I added some hot peppers and banana peppers as well!!! I have tried a couple of spoonfuls and its awesome! Doing a detox and this works perfect for it! - 9/13/10

    I didn't have red beans or spinach or V8 juice but used the rest of ingredients and it tasted great. The flavor of the vegetables was excellent. My husband said it was the best veg soup I have made. - 7/14/08

    From experience, the V8 juice is the taste secret. I added canned Canellni beans, made a fiber filled soup.Next time I will add some Campbell's Minestrone soup to the pot. Thanks. - 7/25/08
