Introduction

If you like crab cakes you'll love this recipe. I found it in the Kraft Foods Magazine (which is free to sign up). Ingredients

    2 cans (6 oz each) light tuna in water, drained, flaked
    1 pkg Stove Top Stuffing Mix for Chicken
    1 cup shredded mild cheddar cheese
    1/2 c shredded carrots
    1/3 c mayonnaise
    2 T sweet pickle relish
    3/4 c water

Directions

Mix all ingredients. Cover and refrigerate 30 minutes.

Heat large non-stick skilled sprayed with cooking spray on medium heat. For each tuna cake, shape 1/3 cup lightly packed tuna mixture into patty. Add patties to skillet in batches.

Cook 3 minutes on each side or until golden brown on both sides, turning over carefully.

Makes 6 servings, 2 cakes each

    Wonderful. I served "open-faced" on an English muffin, spread with guacamole, and topped with a tomato slice.

    Would make a great h'orsdeourve. Spread on a Triscuit cracker, and broil. Top with a dollop of guacamole and 1/2 a cherry tomato.

    My family truly enjoyed this dish! I used Stove Top's SAVORY HERB instead of Chicken stuffing & thought it dee-lish! Used FF Ranch dressing instead of mayo. I also incorporated the drained tuna liquid to make the 3/4 C of water. Couldn't find the 1/3 cup, so measured w/ 1/2 cup--made 10 patties. - 8/8/08

    This dish was fabulous! Fantastic flavor and texture. Usually I don't take leftovers for lunch but I'm going to today. The only thing I changed was I used the lower sodium stove top stuffing instead of the regular. I'm definitely adding this to my regular menu. - 8/8/08

    Easy and delicious! I used 1 cup of chicken brother instead of 3/4 cup water, and made with sour cream. I think adding the shredded carrots helps hold the cakes together. - 8/4/08

    I reduced stuffing by 3/4, added 1 egg to hold cakes together better, switched minced celery for carrot and broiled instead of fried. A nice meal over shredded lettuce & greens w/Asian Fat Free spray on dressing! - 8/4/08

    I'm going to make these tonight for the first time and I love the idea of using non fat sour cream instead of mayo. Can I just ask, what did you serve with it? I was thinking of just making a salad. - 8/3/08

    Actually I think I made a salad with it but I like them just by themselves. I'm going to substitute crab meat next time since I love crab cakes.
