Number of Servings: 4

Ingredients

    * 1 Lb. Pork, Bone-In Country Style Ribs
    * 1 C. or 240g of Red Potatoes
    * 1 Small Onion
    * 2 C. Canned Sauerkraut (Shredded)

    Season to Taste with: Mrs. Dash, Paprika, Black Pepper, Minced Onions, Onion Powder and Garlic Powder. 2 teaspoons of sugar may be added to the Sauerkraut, but it will increase the caloric intake of this recipe.



Directions

*Rinse the Country Style Ribs in cold water evenly season them then layer them at the bottom of the slow cooker.

*Cut the onion in four sections and evenly distribute the quarters over the Country Style Spare Ribs.

* Then cut the Red Potatoes into quarters and evenly distribute them in the slow cooker as well, gently season them to taste.

*Add the Sauerkraut (if you are including sugar in your recipe, sprinkle the two teaspoons of sugar over the Sauerkraut).

*Place the lid over the cooker and cook on low for four to six hours. Please Note: cooking times will vary based on the type of slow cooker that is used.

*Once done a serving should consist of 4 oz. of Country Style Ribs, 1/4 C. Red Potatoes and 1/2 C. Sauerkraut.

Can be served with Applesauce or alone. For added flavor feel free to lightly sprinkle the Sauerkraut with Apple Cider Vinegar before serving.

    I will try this today but I think braising the ribs in a heavy skillet, pouring off some of the oil and sauteing 4 x the onion (& minced garlic) in the skillet and then deglazing the pan with a wine and vinegar bath would result in a rich stock to start the process with. - 1/31/10
