Introduction

I wanted to have a healthy dinner that was also relatively cheap so that I could stretch my dinner and my buck. This is what I came up with! Yummy! I wanted to have a healthy dinner that was also relatively cheap so that I could stretch my dinner and my buck. This is what I came up with! Yummy!
Number of Servings: 3

Ingredients

    1 cup uncooked white rice
    5 tbsp teriyaki sauce
    2 tbsp honey
    1 1/2 tsp onion powder
    1 tsp black pepper
    1 medium carrot, sliced
    1 broccoli floret, broken apart
    2 garlic cloves, crushed
    1-8oz can water chestnuts, sliced
    1 medium to large summer squash
    2 button mushrooms, chopped
    1 small yellow bell pepper, chopped
    1/3 package small cooked shrimp
    10 snow peas
    1 large scallion stalk, chopped

Directions

Cook rice according to package directions. Coat wok with cooking spray (I use Crisco Original Fat Free). Dump in veggies except scallions. Coat again with cooking spray. Put in your teriyaki sauce, honey, onion powder and black pepper. With large spatula, turn to coat evenly. Place the wok over medium heat, turning constantly to prevent sticking and burning. When veggies start to soften just a little but are still crisp, it's done. Enjoy! This makes 3 approx 1 1/4 cup servings. I made it and had it for dinner tonight and then made two portions for lunches for work! I will continue to enjoy this meal, time and time again!
