Ingredients

    2 medium ripe Bananas
    2/3 Cups Granulated Sugar
    1/3 Cups Packed Brown Sugar
    1 tsp Vanilla Extract
    1 Large egg
    3/4 Cups Water


    2 Cups White Flour
    1 tsp Cinnamon, ground
    1 tsp Baking Powder
    1 tsp Baking Soda
    1 dash Salt

    1/4 Cups Butter, salted
    1/3 Cups White Flour
    1/3 Cups unpacked Brown Sugar

Directions

Smash bananas, and combine with Sugar, add Vanilla. Add egg and water.

In a seperate bowl, combine all dry ingredients, and add to the wet mixture.

In a seperate bowl, combine cold butter with 1/3 Cups White Flour and 1/3 Cups unpacked Brown Sugar, mix into a crumb mixture. this will be your topping.

Fill muffin cups 2/3 full with batter
Add topping, evenly
Bake at 350 degrees F, for 15 minutes, toothpick check, make sure it comes out dry.
Cool for 10 minutes, and serve.

    Instead of the topping, I sprinkled a cinnamon/Splenda mix on top and baked it in a 13x9 pan. The banana bars were excellent!

    Incredible!
    absolutely amazing! I burnt the first batch (wasn't paying attention) but The second batch turned out fantastic. I have a question...when it says 1 cup ...how much is it really in gms or oz? I'm worried that the european measure might have ruined the calorie count completely...thanks a mill - 8/30/08
