Ingredients

    100grams instant oatmeal
    3/4 cup flour
    1 tbsp baking powder
    1/2 tsp baking soda
    1/8 tsp salt
    1 cup mashed bananas
    1/4 cup splenda
    1/2 cup applesauce
    3 tbsp egg whites (1 egg beaters serving size)
    1/2 tsp vanilla extract
    1/2 tsp cinnamon

Directions

1.preheat oven to 350 degrees
2.grease muffin tin with Pam or use muffin holders
3.combine flour, oatmeal, baking powder, baking soda, cinnamon and salt into a bowl, mixing well
4.in another bowl, use a mixer to beat the banana, splenda, egg whites, and vanilla. then stir in the apple sauce
5.stir all ingredients together
6.pour mixture into muffin tins, 3/4ths full
7.bake for 15-20minutes, you can also use a toothpick: stick in center of a muffin, if it comes out clean then the muffins are done.

    Not bad for a lo-cal muffin although I DID double the vanilla required; Next time I'm also going to double the Splenda required; Word of warning though, don't use paper liners unless they're waxed paper liners because the muffins will stick like fiends to a standard paper liner; Thanks for sharing! - 8/1/08

    I made these last night and my hubby and I both find them yummy. I doubled the splenda and cinnamon and added a few chopped walnuts. Great as a healthy snack. I will be making them often. - 1/25/12

    This sounds great, but I am having trouble figuring out the conversion of grams to cup measurements. I think I need to go more metric with a scale that does both grams and ounces. I can't rate without trying yet. - 2/5/11

    Good...very moist. Yes, I would recommend doubling the splenda and vanilla. Also, add walnuts to them before baking them. Bake them for 20 minutes! - 4/25/09

    These were really yummy. I used half whole wheat flour/half white flour, doubled the Splenda and vanilla (as per someone else's recommendation). I find them moist and not overly sweet -just the right amount of sweetness. Thanks for sharing the recipe! - 8/26/08
