Introduction

This recipe was adapted by my husband. It's got everything that you need to eat after a good morning run.

We use soy milk for this recipe. Regular milk can easily be substituted.

Number of Servings: 8

Ingredients

    1/3 c whole wheat flour
    1/3 c ground flax seed
    1/3 c white flour
    1 large egg
    3/4 c soy milk
    2 tbsp canola oil
    1 tbsp brown sugar
    3 tsp baking powder
    1/4 tsp salt

Directions

Beat the egg with the milk. Add the sugar and canola oil and mix.

Mix all the dry ingredients together. Add to wet ingredients and mix until well combined.

Cook at medium heat on a skillet. Flip after a few minutes, or when the bubbles do not reclose around the edges.

Makes about 8 4-5" pancakes.

    These were gorgeous!! We added wild woodland blueberries to ours and could not believe how sweet and tasty they were with so little sugar. We'll experiment with applesauce in place of the oil next time to see if we can lower the fat as well. Excellent recipe, thanks! - 6/30/09

    My kids loved these! What a great way to include flax. We didn't have soy milk, so used regular milk, and added a banana per my daughter's request. They tasted great, and one pancake was plenty. - 7/20/10

    Incredible!
    Add cinnamon and a whole apple (shredded), skip the soy milk and we had a winner! Served with homemade blueberry sauce. : ) - 12/28/13

    I made these this morning and OMG they were amazing!!! I used 2 cups of fine organic whole wheat flour and splenda brown sugar and omitted the canola oil completely. I tossed in about 20grams of mini chocolate chips and a dash of cinnamon... these are absolutely incredible! LOVE IT! Thanks!! - 9/6/10
