Introduction

Ingredients

    1.5 pounds uncooked new potatoes, quartered
    1 Tbsp Olive Oil
    2 Tbsp Dijon Mustard
    .75 tsp Paprika
    .25 tsp dried thyme
    .5 tsp salt
    .25 tsp black pepper

Directions

Coat a 9"x13" baking pan with cooking spray, and heat oven to 425F.

Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl. Add quartered small potatoes and stir til they are coated.

Put potatoes in baking dish and roast 15 minutes. Stir and roast another 15 minutes.

    Great combination of flavors! I made a few variations. I diced the potatoes and added sweet potatoes, carrots, yellow carrots, and parsnips. I had 3 pounds of root vegetables so doubled everything else, and it was a huge hit at a potluck dinner. Thanks for the recipe! - 2/5/17
