Ingredients

    2 Chicken Breast cooked & cubed
    1 can Cream of Chicken Soup
    1 can Cream of Mushroom Soup
    1 cup Light Sour Cream
    1/3 Cup Milk, 2%
    1 sm can Green Chilies
    1 Cup grated Sharp Cheese
    Sliced Green Onion
    1 pk. corn Tortillas (12 approx)
    1/2 cup grated Monterrey Jack Cheese for top

Directions

Preheat Oven 325 Degrees

Combine milk, soup, chilies and cook 20 - 30 minutes. Remove from heat and add sour cream.
Pour a small amount of mixture on the bottom of a greased casserole dish 9x12, to prevent tortillas from sticking. Tear tortillas into bite size pieces and layer, tortillas, cheese, chicken, onion, soup. Repeat. Bake 30-45 minutes at 325 degrees
Top with Jack Cheese, return to oven to melt.

Serve with a side of Pinto bean.

    Incredible!
    We loved it! I also used the 98% free soups and fat free sour cream. I reminds me of eating chicken enchiladas with green chili sauce. I'll probably experiment more with it next time. Thanks for sharing! - 8/5/09

    Incredible!
    Mmmm very yummy! Reminds me of something I used to make that had many more calories. The only thing I changed is the chiles. I used a an of Rotel instead and also added pepper flakes to the chicken as it was cooking. I recommend that you turn on Latin music while cooking this!! - 9/29/08

    I am making this for lunch today. I didn't have cream of Mushroom soup so I added some chicken broth, black beans, canned corn and half jar of salsa verde. I will let you know how it turns out. - 9/7/08

    This sounds really yummy. You can reduce a bunch of the sodium and the fat if you use the recipe I submitted for "Make Your Own "Cream of" Soup. I will be trying this one! Thanks! - 8/28/08

    Incredible!
    I messed up a little and ended up with the 2nd layer of tortillas on top without cheese or soup, so I did a quick spray of olive oil over the top so the tortillas would be crunchy and it was great! - 8/25/08
