Ingredients

    meatball ingredients
    1 1/2 lb extra lean ground beef
    1/2 cup bread crumbs
    1 egg & 1 egg white
    1 tsp cumin (ground)
    1 tsp chili powder
    1/4 tsp salt
    1/8 tsp black pepper

    sauce
    1 8 oz can crushed pineapple in juice
    1/2 cup ketchup
    2 tblsp cider vinegar
    1 tbsp brown sugar
    1 carrot sliced
    1/2 cup sliced onion


Directions

preheat oven 350 spray cookie sheet with cooking spray and place in oven to heat up

mix all meatballs ingredients together and form into 36 meatballs

place on cookie sheet and bake until done around 20 minutes
while meatballs cook saute carrots and onions in heated sauce pan with cooking spray until tender add all sauce ingredients and simmer taste and adjust to your liking can add more sugar less vinegar

remove meatballs from oven and place in sauce simmer for an additional 5-8 minutes

serve over rice

serves 6 ( 6 meatballs each)
