Ingredients

    1/2 cp margarine or butter
    1 cp brown sugar, packed
    1 egg

    1/2 cp dry cocoa, unsweetened
    1 1/2 tsp vanilla extract
    1/4 cp soy flour
    1/2 cp whole wheat or rye flour
    1 1/4 cp oatmeal, dry
    1/2 tsp salt
    1 tsp baking powder
    1-3 tsp instant coffee granules(optional)
    2 Tbl wheat bran, crude
    1 Tbl sesame seeds, toasted
    1 Tbl flaxseeds
    1/4-1/2 cp raisins

Directions

Mix first 3 ingredients together, add remaining ingredients, mix well. Drop by large spoonsfuls onto greased baking sheet and bake in 350 oven for 10-15 min.
Makes 14 thick, 2-3 inch cookies.

    How can there be only .8g of sugars if you use a cup of packed brown sugar? - 8/4/08

    That's an interesting question! Spark is the calculator of these things and they have 0 sugars listed for brown sugar whereas white has 199g. I know that brown sugar is much better for you...check out its nutrients!

    this recipe is not lactose free. the very first ingredeint listed is butter. - 10/12/08

    I was going to say use the margarine instead but I noticed that it also has milk products in it. I was not aware of that, sorry! I'll take the "lactose-free" out.

    Too many calories for one cookie! Taste good but I can't afford an extra 200 calories( and thats assuming you can stop at 1 cookie!) - 7/29/08

    These are large cookies. I make them that way so they can be like a meal. Not bad for 200 calories! But you can make them 1/2 or 1/3 of the size to decrease the calories, fat, etc. And that way you can eat more than one! Remember that cookies are treats, not something you should eat every day.

    Can you use more wheat flour instead of the soy flour? I am allergic to soy. - 7/18/08

    Thanks for asking about my recipe! Oh yes, you can substitute the soy flour for wheat or any other kind-recipes are made to change according to your taste! I just put in a bit of soy for the added value of its nutrients. Enjoy!
