This low carb batter can be used for pancakes as well as waffles. I like to double the batch and freeze extras for quick breakfasts thoughout the week. Ingredients

1/2 cup Oats
1/8 cup Soy Milk
3 large eggs
3 scoops Whey Protein Isolate
Directions
Pre-heat waffle iron.
Add all ingredients to blender and puree until a batter consistency is formed.
Pour batter onto waffle iron plate and close. Be careful not to overfill as they tend to expand. Waffles are done when they are golden brown on top.
Makes 4 servings.

I was just finishing up the batter when I realized I didn't have a waffle iron, so made them as pancakes. I addressed the lack of flavor by using chocolate protein powder. These things were DENSE. Tasty, but dense. If you can make em fluffy, I'm all ears! Ate em with fruit and fat free cool whip. - 2/20/13
