Introduction

This bread is tasty and low in fat, and it is simple enough for even novice bakers. This bread is tasty and low in fat, and it is simple enough for even novice bakers.
Number of Servings: 16

Ingredients

    1 cup boiling water
    1 cup quick oats
    1/4 cup honey
    1 tsp salt
    1 packet yeast (3 tsp)
    1/4 cup warm water
    2 cups whole wheat flour



Directions

Makes 1 loaf, 16 slices

1. Combine 1 cup boiling water, oats, honey and salt in and stir in a large bowl. Let sit for 10 minutes.

2. Combine yeast and 1/4 cup warm water stir until dissolved.

3. Add all ingredients and knead until dough is sticky. Then 5 minutes more until dough is smooth.

4. Spray loaf pan with Pam and set the dough in the pan. Cover with a damp towel and let rise for 45 more minutes.

5. Preheat the oven to 425

6. Bake in hot oven for 25 -30 minutes.

    This recipe will work in a bread machine with a couple tablespoons of bread flour added. It doesn't rise as much which results in a dense, moist loaf which provides about 10 slices instead of 16. - 1/27/10

    I make bread (usually with machine) a couple of times a week, using mostly whole wheat flour. This will definitely be added to my bread recipe collection. Will probably add some dried cranberries, grated orange peel, cinnamon and nuts for a good breakfast/brunch bread. - 5/12/10

    Made it as described as well as with my ever present sour dough starter. Both are winners. Awesome, quick and easy. Cavet though, do not pour the boiling water, oats, salt and honey into the yeast slurry. Let it cool to about 100 F first, or it will kill the yeazst! - 11/14/11

    Helpful note: after mixing yeast with 1/4 cup of warm water add to the oat,salt, honey & water mixture this will "proof" the yeast. This will start the rising process. Mix & let sit until little bubbles start to rise then add to flour & mix. let rise with damp towel in a warm non drafty place - 4/11/13

    This bread is thick,moist & delicious!Ridiculously easy to prepare so I doubled it.I'm a novice bread baker & have only made one recipe prior, Jacques Pepin's Easy One-Pot Bread. Alterations: add about 1/3 cup water extra to oat & honey mix as advised by another member ; used whole oats instead - 4/2/13

    I am glad I read all the reviews before making. Like others, mine did not rise much and is very dense & moist. It is not a good bread for sandwiches (which I don't eat anyway), but is tasty accompaniment for soup, snack or meal. I did get 16 thin slices at 1-1.5 oz each. Will try rolls next time. - 12/29/12

    I doubled the recipe, then baked one after one rise as instructed, and punched the second one down and let it rise a second time, they were identical when baked, so the second rise didn't help make it a higher bread. I might try wheat gluten next time, great taste and texture. I love hearty bread! - 1/3/11

    While the taste was good, It is only good for snacking plain. The taste would not work well with sandwiches. It was also way to dense for a yeast bread. If I do make this again I will definitely increase the rise time to overnight. - 1/1/12

    i made this into breadsticks, which was a good call in my mind. the bread didnt rise too much, but it was still nice and fluffy with a crisp crust. I will keep making this recipe as it is one of my favorite breads. maybe next time i will add more yeast to help with rising? - 8/8/11

    I was so disappointed that the bread did not rise very much, resulting in dinky, dense slices. I think the boiling water/oatmeal mixture needs to cool before adding the yeast...I think the hot water killed it. - 10/24/10

    This bread is excellent! I made two batches today, one with 1/8 cup of ground flax seed in it, one as just the original recipe. I did find that I had to knead in about 1/3 of a cup of extra flour both times, but it is really humid today so that is probably why. Amazing bread both times! - 8/7/10

    Very simple recipe. Super tasty. I added a pinch of garlic salt and a little less salt. I also added more water to the oatmeal mix and used a tablespoon of raw natural honey in place of the 1/4c of honey. I didnt have any problem with the dough rising but it is a denser bread.     I baked the bread at 425 for less than 25 minutes (per recipe) and the top burned. It also didn't rise as much as I thought it should. It is very dense and the crust is very dry. I will try another recipe. - 11/5/12

    This brad is very good to put honey on or jelly or jam for breakfast but I do wish that it would rise a little more. Mine became all thick. Does anybody know any tips to make 100% whole wheat bread rise better so that it will be a little lighter? Overall a great recipe! - 6/7/11

    Pretty easy to make, I was a little concerned about the leavening but resisted the temptation to punch it down (it hadn't raised that much anyway) and knead it again.
