Ingredients

    1 tsp olive oil
    1/2 onion, diced very small
    3/4 cup zucchini, julienne
    3/4 cup carrot, julienne
    4 mushrooms, diced very small
    2 tbsp herb and garlic cream cheese spread
    1/4 cup milk
    1 pound salmon (I use the High Liner 4 filet pack, it's great!)

Directions

Saute the vegetables for a few minutes in the oil.
When the vegetables are just cooked, add the cream cheese until melted, then add milk until desired consistency
Pour onto the salmon, cover and place in a 350 F oven for about 20-30 minutes (depending on if the salmon has been thawed or not)

Makes 4 servings of 1/4 pound

    I am cooking this now and it smells delicious. I slightly modified the recipe and added some garlic powder & pepper (the grocery store where I bought the ingredients only had garden vegetable cream cheese, no herb & garlic cream cheese spread), I am also using fat-free milk. - 3/1/09

    I am in the process of cooking this at the moment, and OH MY GOD... it looks freaking amazing, it tastes amazing (I taste tested) and it smells amazing. I used fat free skim milk, and grabbed a container of garden veggie lite cream cheese from dunkin' donuts, but this is one of THE best recipes ever - 6/13/08

    My husband went to the kitchen in his "browsing around" mode, and I told him that I was sorry there wasn't any left.     My fiance ate this and he does not like cooked veggies but loved this
    . I did try the Garden Herb cream cheese and low fat milk. I would definatly make this again.
