Ingredients

1 tablespoon olive oil
1/2 cup finely broken vermicelli, uncooked
2 tablespoons diced onion
1 cup long-grain brown rice, uncooked
1 1/4 cups hot chicken stock
1 1/4 cups hot water
1/4 teaspoon ground white pepper
1 bay leaf
2 tablespoons grated Parmesan cheese
Directions
1. In a large skillet, heat oil. Sauté vermicelli and onion until golden brown, about 2 to 4 minutes over medium-high heat.
2. Add rice, stock, water, pepper, and bay leaf. Cover and simmer 15-20 minutes. Fluff with fork. Cover and let stand 5-20 minutes. Remove bay leaf.
3. Sprinkle with cheese and serve immediately.
Yield: 6 servings--Serving Size: 2/3 cup each

I have made this many times. I always add granulated garlic to just about everything next time will use Brown Rice & whole wheat as I have made the switch from white to brown in my house! Will need to cook longer I am sure. Thanks for posting this now I have the nutrition info! Good Suggestions here - 7/23/09

When I saw the commentby Vsingle72 that it was made with brown rice and came out great I decided that I will give this a try. We never eat white rice in my house anymore as it really has no nitritional value. I will also use a whole wheat vermicelli. Thanks for this recipe, I'm sure my family will l - 1/22/09
