Introduction

Sauteing the rice and onion adds tons of flavor with very little fat. Sauteing the rice and onion adds tons of flavor with very little fat.
Number of Servings: 6

Ingredients

    1 tablespoon olive oil
    1/2 cup finely broken vermicelli, uncooked
    2 tablespoons diced onion
    1 cup long-grain brown rice, uncooked
    1 1/4 cups hot chicken stock
    1 1/4 cups hot water
    1/4 teaspoon ground white pepper
    1 bay leaf
    2 tablespoons grated Parmesan cheese

Directions

1. In a large skillet, heat oil. Sauté vermicelli and onion until golden brown, about 2 to 4 minutes over medium-high heat.

2. Add rice, stock, water, pepper, and bay leaf. Cover and simmer 15-20 minutes. Fluff with fork. Cover and let stand 5-20 minutes. Remove bay leaf.

3. Sprinkle with cheese and serve immediately.

Yield: 6 servings--Serving Size: 2/3 cup each

    This is great! It has twice the protein of chicken Rice-a-Roni, fewer calories and carbs, PLUS less than 1/10 the sodium: 65 mg vs 960 mg in the mix. The recipe is so versatile; it can be adapted to fit many tastes and situations. Love it! Thanks for sharing. - 7/17/09

    Everytime I have made this I have forgotten the parm cheese. Even without it, it was great! It doesn't keep longer than a week though, so IF you have leftovers eat them quickly. - 8/22/09

    Loved it! I used rice sticks (no vermicelli available) and more onion than called for. I also put the uncooked rice in with the onions and rice sticks to brown - not sure if that changed the taste any but it was good! - 3/23/09

    WOW! Homemade rice-a-roni! One of our favorite comfort foods! This dish is yummy...even better than the name brand and MUCH healthier, too! Thank you! Making this a staple in our house!     I have made this many times. I always add granulated garlic to just about everything next time will use Brown Rice & whole wheat as I have made the switch from white to brown in my house!     I made this recipe last night and everybody just loved it. I substituted the white rice with brown rice. I also added chicken breast cut in small pieces. I love all recipes with parmesan cheese. Excellent.

    This recipe sounds good but is it supposed to have chicken in it? When I pulled the ingredient list it had chicken breast in it. Which would makes sense with the nutrional value for protein. - 1/31/09

    Why would anyone still use white rice or regular pasta? Substitute brown rice and whole wheat pasta and boil it in 98% fat free, low sodium chicken broth and add some veggies. Be healthy. - 3/22/09

    I made this using whole grain thin spagetti I had on hand, added more onion than called for along with finely diced carrot and sauteed all the ingredients in the olive oil to carmelize the veggies and toast the grains. It was delicious! My husband and son loved it! - 11/12/09

    When I saw the commentby Vsingle72 that it was made with brown rice and came out great I decided that I will give this a try.     I made a guten free version using br rice & br rice vermicelli; extra onion, garlic (jar) & a mix of turkey juices and stocks from the freezer.
    Topped with frozen veg 5 min before finishing with the parmeson cheese.

    I made this in my rice cooker--sauteed the pasta in oil first, then drained it on paper towels, added it to my rice cooker with the remaining ingredients and let it cook as per usual. I omitted the onion due to family preferences, but added onion powder for the taste. Good! - 4/25/10

    Sounds delish but I was sceptical on the protein count when therei s only chicken stock.
