Ingredients

1 8 inch flour tortilla
2 tablespoons pizza sauce
1 cup Fresh Express Baby Spinach
1 sliced Roma tomato
1 tablespoon feta cheese
2 tablespoons low fat mozzarella cheese
Sliced black olives (optional)
Directions
1. Turn on oven broiler.
2. Spray cookie sheet with spray margarine and place tortilla on sheet.
3. Toast tortilla lightly on both sides under broiler.
4. Top tortilla with sauce, spinach leaves, and tomato slices.
5. Sprinkle on feta cheese and mozzarella cheese.
6. Place under broiler until cheese melts.
7. Top with optional olives.
Serving size: 1 tortilla

this has become a staple for me. it has morphed into a yummy veggie concoction that is easy and oh so flavorful. i use mild peppers, onion, green pepper, and any other veggie that strikes my fancy at the time. i use plain tomato sauce and sprinkle pizza seasoning on. real quick. real good:) - 10/31/08

This was VERY easy to make. I think I need to experiment. I'm picky about my cheese. I used a low fat tomato basil soup for a base, and it may have been too much. I LOVE the idea, and I replaced the tortilla with a whole wheat tortilla! I will definitely make this again and try it different ways! - 10/27/08

One of my favorite personal meals, I use a lo carb tortilla, marinara, turkey pepperoni, whatever cheese I have (feta, blue, mozzerella, taco mix, etc), black olives, onions, green peppers, and broccoli. Ups the calorie count to about 400 but it's a great and filling meal that feels like a splurge! - 7/17/08

Used plain tomato sauce with a few shakes of herbs for cleaner taste.
Used better brand of whole grain tortilla which decreases calories and sodium greatly AND adds 4g protein & 12g fiber!!!
By strange quirk of fate, all I had on hand was a rye tortilla but flavor went well with the Spinach&Feta - 2/19/10
