Introduction

Yum! Try this quick and easy thin-crust pizza. Yum! Try this quick and easy thin-crust pizza.
Number of Servings: 1

Ingredients

    1 8 inch flour tortilla
    2 tablespoons pizza sauce
    1 cup Fresh Express Baby Spinach
    1 sliced Roma tomato
    1 tablespoon feta cheese
    2 tablespoons low fat mozzarella cheese
    Sliced black olives (optional)


Directions

1. Turn on oven broiler.

2. Spray cookie sheet with spray margarine and place tortilla on sheet.

3. Toast tortilla lightly on both sides under broiler.

4. Top tortilla with sauce, spinach leaves, and tomato slices.

5. Sprinkle on feta cheese and mozzarella cheese.

6. Place under broiler until cheese melts.

7. Top with optional olives.

Serving size: 1 tortilla

    I tweaked this by using ready made Trader Joes Whole Wheat Pizza Crust (120 cal) and low fat feta (50 cal/T). I also added chopped canadian bacon, only 20 calories per slice. No one knew this was "diet" pizza, and better yet, the calories were reduced to 200 per mini pizza! - 1/31/09

    It's hard to find a flour tortilla with fewer than 300 grams of sodium. A corn tortilla has 5 to 25. I don't know what is in white flour, but it is a big difference. And Paul Newman pasta sauce has the least sodium, too. - 12/14/08

    I make this but use a "heart healthy" whole wheat pita (60 calories only) instead of the tortilla. Just pop it in a pie pan, broil till the cheese melts...Great lunch! - 7/17/08

    this has become a staple for me. it has morphed into a yummy veggie concoction that is easy and oh so flavorful. i use mild peppers, onion, green pepper, and any other veggie that strikes my fancy at the time. i use plain tomato sauce and sprinkle pizza seasoning on. real quick. real good:) - 10/31/08

    I tried this yesterday for dinner. Very easy to make and tasted really good and was filling. I used a whole wheat tortilla and added some onion and bell pepper too. The feta really makes it tasty. Definitely a keeper and one that you can build on by adding different ingredients. - 10/24/08

    This was very nice. I used Campbell's Healthy Select Tomato Basil soup in place of regular pizza or spaghetti sauice. It tasted just as great and it was less calories. - 10/16/08

    Great recipe! Easy and fun for the kids. We don't like tomato so we opted out for those, but loaded the tortilla with plenty of spinach and sauteed onions. The kids got to put turkey meatballs on theirs. One was enough with a small salad. - 4/24/09

    This was VERY easy to make. I think I need to experiment. I'm picky about my cheese. I used a low fat tomato basil soup for a base, and it may have been too much. I LOVE the idea, and I replaced the tortilla with a whole wheat tortilla! I will definitely make this again and try it different ways! - 10/27/08

    It was SOOOOOOO good. I was surprised cause I'm not big on spinach. I used a low fat tortilla, only 130 calories, and fat free feta, only 35 calories per T., so I think if I run the calories on the stuff I used, it will be less calories. Thank you for the recipe! It was great. - 7/20/08

    One of my favorite personal meals, I use a lo carb tortilla, marinara, turkey pepperoni, whatever cheese I have (feta, blue, mozzerella, taco mix, etc), black olives, onions, green peppers, and broccoli. Ups the calorie count to about 400 but it's a great and filling meal that feels like a splurge! - 7/17/08

    Sounds great and fast, both my special loves.
    Can't wait to try it.
    I learned a trick to toast torillas that should be faster than the broiler. If you have a gas stove, lay the tortilla right on the burner and turn often until toasted. Real fast if the flame is high.

    This recipe sounds like one I need to make for my family--everyone can personalize their pizza! My husband and boys don't eat tomatoes, so those will be left off. But the cheeses are really enjoyed. I like the idea of adding sauteed garlic, peppers and onions to it. Yummy! - 10/31/08

    Sounds good. I will make it, with a whole grain flour tortilla, (lotsa fiber and so tasty). Also add mushrooms and red onions for sure! I'm not sure...? Prob. will reduce the amt. of feta, put extra mozzarella (for taste and to reduce sodium). - 7/17/08

    This is one of my favorite go to recipes. I use frozen spinach, fat free feta, pizza sauce and red onions, sometimes broccoli and stick it in the oven for a few. its amazing!!! and very versatile! If you cook it on a pizza stone, it crisps up perfectly! - 10/19/10

    Used plain tomato sauce with a few shakes of herbs for cleaner taste.
    Used better brand of whole grain tortilla which decreases calories and sodium greatly AND adds 4g protein & 12g fiber!!!
    By strange quirk of fate, all I had on hand was a rye tortilla but flavor went well with the Spinach&Feta
