Ingredients

    1 medium eggplant
    1 medium onion
    1 medium red bell pepper
    1 medium zucchini
    1/4 cup Ken's Steak House fat-free Sun-Dried Tomato Vinaigrette (or other brand, as you like)
    16 ounces canned diced tomatoes, low-sodium (with any added ingredients you like, garlic, oregano, basil, etc.)
    2 tablespoons grated parmesan cheese
    1/2 cup shredded part-skim mozzarella cheese

Directions

1. Cut the eggplant, onion, red bell pepper & zucchini into bite-sized chunks.

2. In a large ovenproof skillet (cast iron works great), saute the vegetables over medium high heat in the salad dressing until tender - about 10 minutes.

3. Pre-heat oven to 350 degrees.

4. Reduce heat to medium, add the diced tomatoes (juice and all) and cook about 15 minutes, allowing some of the liquid to evaporate.

5. Top the cooked vegetables with the parmesean and mozzarella cheeses.

6. Bake at 350 for 15 minutes.

Makes 8 side dish servings or 2-3 entrees

    I added two cloves garlic, plus oregano, basil, lemon pepper, a bit of cayenne pepper, salt, & a tsp. of sugar. Took it to Christmas dinner & the family RAVED about it! - 12/26/08

    I am making a variation of this now. I am using Parmesan instead (husband didn't get mozzarella, oops). I didn't have the dressing though...so I had to add olive oil to the saute. Thank you! - 11/8/09

    I love vegtables and so had to try this. Wow , i added mushrooms and skipped the zucchini(not a fan). Would be great as a side to chicken or even with Pasta. - 5/27/08

    Soooo good! My husband made a face when I said there was eggplant in it but I brought it for a potluck dinner (1/2 the recipe because that makes a HUGE amount) and it dissapeared so fast I barely got any! The taste was fantastic and the texture was great! - 5/10/08
