Ingredients

    One 15 oz. can pumpkin
    1-1 1/2 cups Nonfat cottage cheese
    2 eggs
    1/2-3/4 cup sugar
    1 tsp. cinnamon
    1/4 tsp cloves
    1/4 tsp. salt or to taste
    1/4 tsp. allspice

Directions

Blend eggs, pumpkin, cottage cheese, spices, and sugar in a bowl. Beat for about a minute with an electric beater to break up the cottage cheese a little more. Pour into a pie pan that has been generously oiled with olive oil. Bake in a 350 degree oven for 35 minutes

    Pretty yummy. But I just couldn't get the cottage cheese to blend very well. The nutritionals surprised me given the nature of the ingredients, but it looks like you have 2 cups of eggs listed rather than 2 eggs! This will alter the fat & cholesterol significantly! - 2/8/09

    Incredible!
    I used 1.5 cups full fat cottage cheese, no sugar, and 4 tb honey instead. I baked for about 60-70 min. It is very good. I will make it again for sure. I made 4 servings out of the whole thing. - 7/2/09
