Introduction

Low carb and very yummy! I threw this together with ingredients I had on hand and it turned out delicious! My husband and daughter could not get enough of it! I love crockpot recipes, especially in winter. You can use low fat/reduced sodium cream of chicken soup if you want to reduce fat and sodium more and serve this over rice or wide egg noodles if you aren't watching carbs. Low carb and very yummy! Ingredients

    ~3 lbs raw boneless, skinless chicken breast, cut in large chunks
    ~2 cups fresh mushrooms, sliced
    ~1 (8 oz) bottle Ken's Steak House Creamy Caesar Dressing (or other creamy Caesar dressing)
    ~4 ounces Neufchatel cheese (low-fat cream cheese)
    ~1 can (10.75 oz) cream of chicken soup
    ~8 oz part skim mozzarella cheese, shredded

Directions

Pour bottle of Caesar dressing into crock pot.
Add chicken breast chunks and mushrooms, stir to coat, cover.
Cook on high for about 4 1/2 hours.
(There will be lots of liquid in crock pot at this point and you may remove about one cup of it if a thicker consistency is desired, but the next few ingredients will thicken it rather nicely.)
In bowl, mix together cream of chicken soup and softened cream cheese.
Stir soup/cream cheese mixture into chicken in crock pot gently.
Add mozzarella cheese, stir gently.
Cook another 1/2 hour until cheese is melted and mixture is hot.
Serve and enjoy!

Makes about 8 half cup servings.

    This was really good. I used shitaki & baby portabella mushrooms for more flavor. Next time I would use a 1/2 bottle of the Caesar dressing and omit the mozzarella cheese (only because it doesn't really add any flavor or consistency). - 5/23/12

    Made a few tweaks. Added a head of broccoli, used a small bottle of light ceasar dressing, less chicken, used a little grated parmesan cheese (only thing I had on hand), 1 serano pepper. The serano pepper added a nice kick to the recipe. It was a hit in my house! - 8/7/12

    Loved it, would have given it 5 stars but I used a bit less dressing in recipe, otherwise a little too strong for my taste. My husband loves it and he is not low carb dieting! I just make him a bit of rice or mashed potatoes to go with! - 9/3/12

    Fabulous! Only used 4 oz mozz cheese, but otherwise followed the recipe, cooked 4 hours then added the extra stuff. Husband loved it, wouldnt let me have his plate so I could put the vegetables on it because "it's too good!!" LOL! a keeper. used whole bottle kraft light ceasar dressing. - 7/13/10

    very good - my husband loved it. the kids thought the caesar dsg gave it a slightly sour taste but still liked it. I just realized i forgot to add the cheese at the end. will definitely have to make sure I do that next time. - 1/5/09

    This is honestly one of my favorite things to eat! It only calls for 8 oz of ceaspr dressing so it's important to pay attention not to add to much. Instead of using canned condensed soup I make my own. First by making a roux of butter and flour then by adding chicken stock. - 1/8/18

    Tasty, but 500 calories is way too many for a 1/2 cup serving with no other parts to the meal, add some potatoes, rice or noodles and a veggie and it will be about 700-800 calories for the meal, more then half of the calories for the day, I can see places it could be cut back plus add more mushrooms - 12/14/14
