Introduction

Quick and easy, lower sodium alternative to the jar Alfredo Sauce. Quick and easy, lower sodium alternative to the jar Alfredo Sauce.

Ingredients

    2 Tbsp Olive Oil
    1 small onion, chopped
    1 clove garlic, minced
    1 can chicken broth, reduced sodium
    8 oz cream cheese, reduced fat
    1 Tbsp corn starch
    2 Tbsp water
    2 Tbsp parmesan cheese, grated

Directions

Saute onion and garlic in olive oil until translucent in a sauce pan. Add can of reduced sodium chicken broth and bring to boil. Reduce heat and add cream cheese. Stir until cream cheese melts into smooth mixture, do not boil. Make slurry of corn starch and water. Add slurry and parmesan cheese to mixture. Stir until thickened. Spoon sauce over your favorite pasta to serve.
Makes about 8 1/3 cup servings

    Very good and very easy, better than the jared crap at the grocery. Plus it is low sodium compared to the jared stuff. I made it four servings instead of eight though like more sauce. - 8/5/10

    I loved this recipe and so did my girls.I threw in a few shrimp some lemon zest and juice poured it over a whole wheat pasta served roasted asparagus on the side and yummyness was made. Love,Love the low sodium. - 3/13/09
