Ingredients

    1 lb bok choy
    1 clove garlic, minced
    1 Tbsp greated fresh ginger
1 Tbsp Extra virgin olive oil
    2 Tbsp water
1 tsp reduced sodium soy sauce
    Dash of ground black pepper
    1 tsp dark sesame oil

Directions

Cut 1 inch off the bottom of the bok choy and separate the stems and leaves. Cut the stems into small pieces and cut the leaves crosswise into medium strips. In a large pan saute the garlic and ginger in the olive oil for a minute over medium heat. Add the bok choy stems (they take longer) and saute 3-5 minutes more. Add the leaves and water and cook another 6 minutes, stirring occasionally. Season to taste with soy sauce and pepper. Stir in the sesame oil and serve while hot.

I was out of sesame oil. But this was SO good even without it. I had two servings... but for such few calories my diet bank could afford it. Can't wait to try it with the sesame oil. - 5/9/09

I made this for dinner tonight, and it was excellent! I used tamari instead of low-sodium soy sauce, but still had to add an additional Tbsp for my taste. I also added a few dashes of chili powder for a little extra kick. I will be making this regularly from now on, it was fantastic!!! Thanks! - 1/16/09

I enjoyed this recipe. First time I have cooked Bok Choy. I might add a little more soy sauce & sesame seed oil. Also, want to try adding some toasted sesame seeds. - 6/1/14

Just made this recipe. I threw in some pea pods (just cause I had them laying around) and a big pinch of red pepper flakes for some kick. I'm a vegetarian, so i just served this over some quinoa for my supper. It was delicious and definitely a keeper! - 7/30/12
