Introduction

Ingredients

    2 Cups sliced squash
    1 can reduced fat cream of chicken soup
    1 cup fat free sour cream(Breakstone's)
    1 large egg
    1 cup of Heart Smart baking mix
    1 vidalia onion chopped
    1 tsp Zaterain's blackened seasoning
    1/2 cup 2% Sharp Cheddar

Directions

Preheat oven to 350.
In a large bowl, beat one egg.
To this, add bisquick,soup and sour cream. Mix until combined.
To this add squash, onion, and blackened seasoning (may reduce seasoning to 1/2 tsp but add 1/2 tsp salt).
Mix in half of sharp cheddar.
Bake for 35 minutes. Remove and add remaining cheese. Bake additional 10 minutes. Serve warm.

    I tripled the recipe - took much longer to cook. Use a shallow pan when making that much - bowls don't work. Everyone loved this. We will definitely eat this again and again! - 11/7/10

    How much bisquick? Doesn't say anything about bisquick in the Ingredients, only in the directions. - 1/6/09

    Sorry about that. I used Reduced fat bisquick, but heart smart baking mix was what was on the tracker.
