The traditional stove method take too long to make for someone like me who's always on the go. By using the slow cooker you are not sacrificing any flavor but I can save a few hours cooking by the stove.

The traditional stove method take too long to make for someone like me who's always on the go. By using the slow cooker you are not sacrificing any flavor but I can save a few hours cooking by the stove.

Number of Servings: 8

Ingredients

    * 4 cups Sauerkraut
    * I can Del Monte Diced Tomatoes, No Salt Added
    * 1 medium onion
    * 10 oz polska kielbasa, cut into bite size pieces
    * 6 oz lean pork chops( you can omit or substitute any other meat you like)
    * 1 tbsp Olive Oil
    * 2 cups sliced mushrooms
    * 2 cups tap water
    * 2 bay leaves
    *salt & pepper to taste

Directions

-Drain and rinse the sauerkraut. (Reserve the liquid in case the stew comes out too mellow.)
-Saute the kielbasa so it develops a crispy outside; remove from pan
- Season the pork and saute on both sides in the same pan; remove
-In the same pan, saute the onion and mushrooms until half way done

Put all above ingredients in you slow cooker, add tomatoes, bay leaves and water.

Mix well. Cover and set your slow cooker to the desired temperature.

** Additional tips
-If your sauerkraut is very sour from the jar, boil it in water in a pot on a stove for about 30 min; drain and discard water. Repeat if needed.
-Bigos takes better the more you reheat it
-If your stew is not sour enough you can add the reserved liquid from the jar.
-If your cooked stew came out too sour; cook one small cabbage in salted water for about 10-15 minutes or until soft and add to stew. Mix well and cook additional hour.
-I usually set my slow cooker on high for 6 hrs.

    Incredible!
    Yummy!I did boil the sauerkraut first since I don't like it super sour. I've also added thyme, caraway, and fresh garlic to season it further. And I used chopped bacon instead of the pork chops. It turned out delicious. - 5/2/11
