Introduction

Ingredients

8 boiled eggs
1/4 cup chopped dill pickles
2 tbsp light mayo
1 tbsp honey mustard
pepper, dash to taste
splenda, dash to taste
Directions
Boil eggs. Once done, drain hot water and add cold water. Let sit for about 10 minutes. Then, peel the eggs. Once peeled, halve each egg and gently remove the yolk.
Add yolks to a bowl and mash with a fork to a crumbled texture. Add chopped DILL pickles, light mayo, and honey mustard and mix completely. Once mixed well, add pepper and splenda to taste. If you prefer it saltier, add salt. Sweeter, add splenda.
I used dill pickles instead of sweet relish since I used the honey mustard instead of regular yellow mustard. Yellow mustard has less fat and carbs than the honey mustard, but the sweet relish has more carbs than the dill. If you prefer to watch carbs, use regular full fat mayo...but fat count will increase.
Once combined together, put mixture into a pastry or ziplock bag and pipe into egg halves.
Makes 16 halves.
