Introduction

This recipe was given to me by my elderly neighbor. You can use ground beef, ground turkey or even shredded chicken. The meat and the chilies give the veggies a wonderful flavor. Hope you Enjoy. Ingredients

    1# Ground Turkey
    6 cups 99% fat free chicken broth or low sodium
    28 oz. Diced Tomatoes
    10 oz. RoTel Diced Tomatoes w/Green chilies
    1 cup carrots, diced
    1 cup celery, diced
    1 cup onions, chopped
    1.5 cup cabbage, shredded
    2 cups water
    1 cup of Whole Wheat Pasta noodles
    Pepper to taste

Directions

Brown ground turkey and onions until done. Drain. Add all ingredients EXCEPT pasta into large stockpot. Cook until veggies are tender. Add whole wheat pasta and cook additional 5-7 minutes. Serving size for soup is 1 cup. I guesstimated at the amount in the pot once cooked and guessed at 15 cups...that's what the calorie count was based on. When serving you can garnish with a little mozzarella, provolone or whatever kind of shredded cheese you prefer. Enjoy!
