Ingredients

    2 fennel bulbs, halved and sliced
    2 medium sweet red peppers cut into 1 in. pieces
    1 medium onion cut into 1 inch pieces
    3 garlic cloves
    1 tablespoon olive oil
    1/2 teaspoon salt
    1/2 teaspoon cracked fresh ground pepper
    1 tablespoon fresh chopped sage
    extra sage rolled and thinly sliced in ribbons

Directions

Place the fennel, peppers, onion and garlic in a 15-in. x 10in x 1in. baking pan coasted with cooking spray.
Drizzle with oil, sprinkle with salt, pepper, and sage.
Toss to coat.
Bake, uncovered, at 425 degrees for 20-25 minutes
or until tender, stirring twice.
Garnish with fresh fennel ribbons.

    I added a small zucchini and a small yellow squash, and used Italian Seasoning instead of the sage. It was awesome!! Roasted fennel has a whole different taste than fresh in a salad! - 4/3/16

    Very tasty. I used one red and one orange pepper. Very colorful. Fennel is sometimes hard to find in my area. I got mine at Trader Joe's. 2 bulbs all trimmed up in a plastic container. Very convenient. Even if you don't care for Licorice, try Fennel. You will be surprised. - 3/10/13

    This was delicious. I cut the recipe in half, omitted the sage and piled it onto a toaster oven pan to bake. When the vegetables were tender I sprinkled on some parmesan and mozzarella cheese and baked until melted. Had the whole thing for dinner! - 4/4/12

    Great recipe to mix up some roasted veggies. I didn't have sage so I put in a garlic clove and sprayed everything with my olive oil mister. Will make this again! - 11/5/10

    I've never had fennel before and was looking for an easy dish that would allow me to actually taste what it was like. I left out the sage since I'm not a big fan of it. Wow was it ever good. I added more garlic and left it whole since I love roasted garlic. Definently will make this again! - 5/14/10
