Number of Servings: 8

Ingredients

    6 cups Green Beans (snap is best, but if you use canned, make sure they are no salt added)
    2 cups fresh Mushrooms, in large dice, about 8 oz. by weight
    1 can Reduced fat Condensed Cream of Mushroom soup
    1/2 cup Reduced Fat Milk (1%)
    2 cloves garlic, crushed
    Dash, fresh ground black pepper
    1/2 cup French Fried Onions.

Directions

Preheat oven to 375 degrees.
Cut green beans into 1 inch lengths. Chop mushrooms into dice, set aside.
In the bottom of a baking dish, combine soup, milk, garlic, and pepper until smooth. Add green beans and mushrooms, stir until coated and evenly distributed. Sprinkle onions on top in an even layer.

Bake 30 - 35 minutes, until onions are crispy and sauce is bubbly. Makes approximately 8 1-cup servings.

    I made this with lots of fresh onions added to it. I also use frozen beans. It was great. You can even skip the french fried onions or carmelize fresh ones in a skillet and use as a topping to control the fats. - 7/2/08

    The extra mushrooms added that extra yumminess! I used canned green beans that were salted and it cooked perfectly in the time stated. I did have the oven on 325 since another dish required that temp. - 1/8/08

    I cooked this using green runner beans. It was a nice dish. Next time I would double the quantity of mushroom soup as the soup only covered half the green beans. - 9/17/11

    I've tried this with both fresh green beans and canned. Both iterations were good but found, like others, the fresh beans did not cook thoroughly. The next time I use fresh beans, I'll cook it without the layer of onions as that started to burn and kept me from cooking it longer. - 12/31/07

    This dish was good and easy to make, however I found that buying the canned green beans that are unsalted was just no good. It needs salt b/c otherwise, it just tasted like water to me. I just added salt to my portion and it was good! - 12/27/07

    I may try this again with canned green beans. I tried to use fresh and they never cooked. After over an hour I put the whole thing in the microwave, which turned the topping/sauce to mush. The taste wasn't great either. - 11/4/07
