Ingredients

    10 oz. package prewashed spinach
    4 boneless, skinless chicken breasts, uncooked
    1/2 tsp. pepper
    1 can diced tomatoes
    1 cup sliced fresh mushrooms
    1/2 cup Balsamic Vinaigrette Salad Dressing
    1 cups shredded mozzarella or Parmesan cheese

Directions

Spray a 9x13 baking dish with cooking spray. Place spinach in the bottom of the dish. Place chicken on top of the spinach; season with pepper. Place the tomatoes and mushrooms on top of the chicken. Pour the dressing over the spinach, chicken, tomatoes and mushrooms. Top with the cheese. Bake at 350 degrees for 40 minutes.


Serve over angel hair pasta or rice (pasta and rice are NOT included in calorie count, please add your portion of pasta or rice to your daily food log.

    I loved this and OOPS! I had Rotel Tomatoes with green chilies - a great way to kick it up a notch! I also had the water issue, but I just placed the chicken on our rice (the spinach just held on!) LOVED THIS!!! Even topped with more Balsamic vinegar. - 8/18/09

    I don't know what I did wrong, mine was very watery. I thought it was OK. The kids ate the chicken. My husband wouldn't touch any of it:( - 7/28/09

    I used diced tomatoes with garlic, basil and oregano, which I drained before putting on top of the chicken. It was still quite watery, but very good! - 1/23/13

    I loved this! I used halved grape tomatoes instead of canned and their sweetness played nicely off the shredded parm. Yes, it was watery but i used a slotted spatula to remove the food from the pan and it worked perfectly. Served with some garlic bread, everyone was happy. - 12/21/10
