Ingredients

    1 medium apple
    3 stalks celery
    1/4 red onion
    1/2 c. roasted chicken
    1 1/2 TBSP. low fat mayonnaise
    dash pepper

Directions

makes 1 serving


Chop apple, celery, onion. Add roasted chicken. Mix mayo and pepper in.
Serve on lettuce leaf or with some low fat crackers.

    One of my favs! I prepare chicken for my family's meals often and am left with leftovers that I use to make this awesome chicken salad! I make it basically the same, but will use chopped green onion, walnuts and chopped craisins in it, too! Great on whole grain pitas w/lettuce! - 3/19/09

    When we have left-over rotisserie chicken I strip the carcass (usu. about 1 c. chicken), and make a similar salad-but I add 1/4 c. walnuts and some tumeric and celery seed to the mayo before mixing. Makes enough to fill 3 whole pita rounds. - 10/13/11
