When I threw this recipe together, I was actually shocked at how absolutely delicious it turned out. It's lip-tingling and packed full of flavor, with wonderful texture!. Ingredients

    12 oz. boneless, skinless chicken breast in 1-oz. chunks
    1 egg white
    1/2 c. dry seasoned breadcrumbs
    1/4 c. all-purpose white flour
    1/4 c. Louisiana-style hot sauce (Franks Red-Hot, Texas Pete) plus more for drizzling
    butter-flavored nonstick cooking spray
    Light ranch dressing (optional, not included in recipe totals)

Directions

NOTE: The reason the ingredients and the nutrition may seem a bit off is because you will be THROWING AWAY more than half the breadcrumbs and most of the flour. It'll never make it to your mouth, but it makes the breading process much easier.

1. Preheat oven to 350F. Set up a breading station: put flour, breadcrumbs, and egg white in small separate dishes.
2. Carefully bread chicken chunks by first rolling in flour, dunking in egg white, then rolling and pressing in breadcrumbs until well-coated. DISPOSE of leftover breading ingredients! They've been all over that raw chicken.
3. Place chicken on a baking sheet sprayed with nonstick spray. Spray tops of chicken nuggets with cooking spray.
4. Bake for 15 - 20 minutes. Halfway through the cooking, flip chicken nuggets and spray bottoms with nonstick spray.
5. Dump half the hot sauce into a large bowl. When nuggets are cooked through, add them on top of the hot sauce, and cover them with the remaining hot sauce. Toss until coated with tongs.
6. Place chicken back onto baking sheet, and place under broiler for 2 minutes. Keep an eye -- broilers burn things. Quickly. The sauce will get hot and fragrant, and the nuggets will turn that great orangey color.
7. Plate your delicious boneless buffalo wings, and drizzle with more hot sauce and ranch dressing.

Makes 12 good-sized nuggets; 2 6-nugget servings. (Or, for a snack, 4 3-nugget servings.)

    I combined this recipe with another one I found here. I replaced the seasoned bread crumbs with crushed corn flakes and seasoned it myself with black pepper, and onion and garlic powders. I also replaced the white flour with whole wheat flour. I didn't dip in hot sauce.My husband and I both loved it - 10/7/09

    These did not work in the slightest for me and I followed the directions perfectly. On half of them, all the breading came off when they got flipped and the few that it stayed on the bread crumbs were soggy and not crispy at all - 3/23/13

    We've made this a bunch of times since I first reviewed this recipe. My husband discovered that if you skip the flour, they do seem to crisp up more. Also, it's good with a sprinkle of cayenne pepper mixed in with the bread crumbs! =) - 9/18/11

    These suck. I will not make it again. I am a fan of really crunchy boneless wings, and no matter what I did....they did not get crunchy. Yes, I followed the recipe. I left them under the broiler forever. They looked a little burnt....the way I wanted them, and still there was no crunch. - 7/29/11

    You can do this in the crockpot too...Just remove breadcrumbs, flour & egg white. Add a little water and voila! - 5/3/11

    These are just fantastic!!! When I am in a hurry I just use oven fry. I also make them and not put the sauce on them. I whip up a lower calorie Cane's chicken sauce and they are wonderful! - 2/6/11

    I soaked my chicken in milk, vinegar, and hot sauce before breading them (I didn't use the egg). I froze the leftovers and they re-heat very nicely. I like to mix with salad greens, tomato, lo-fat cheese, and ranch for a buffalo chicken salad...or put those same ingredients in a tortilla wrap. Yum! - 2/22/10
