Ingredients

  • Stock Pot
  • 6 Cups water
  • 1 Lb boneless, skinless chicken breast
  • 1 Package of Taco Seasoning ( 8tsp for mild flavor )
  • Can of corn
  • Can of back beans
  • Can of tomato paste ( 6 oz)
  • 2 Cups un cooked instant rice

Directions

Combine all the ingredients into large stock pot. Except for instant rice...Bring to a boil and simmer for one hour or more... Until the chicken is falling apart. Add Rice 10 minutes before you are ready to serve...

You may add garnishes such as taco chips, avocado, sour cream, cheese...

    Easy to make and i was able to use up some leftover chicken which cut cooking time in half, and tasted really good - 12/28/07

    Very Good
    I made this tonight. GOOD!! I will be making this again. My chicken cooked faster than the hour (maybe 20 min). I could easily get more like 8-10 servings for this. It was thick, I think next time I will use a little less rice, or more water. - 2/11/13
