Introduction

A yummy way to start the day with very little fat and lots of flavor! A yummy way to start the day with very little fat and lots of flavor!
Number of Servings: 12

Ingredients

    1 cup old fashioned oats (not instant)
    1 cup skim milk
    1 cup whole wheat flour
    1/2 cup brown sugar
    1/2 cup unsweetened applesauce
    2 egg whites
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon sugar
    raisins or nuts (optional)

Directions

Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the cinnamon and sugar and top each muffin with some of the mixture.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
These can be frozen and reheated in the microwave for a quick breakfast.

    These taste really good! This recipe is a definite keeper and will be made often. I was able to get 14 regualr size muffins out of this recipe. The only change I did was use splenda instead of the sugar. Try this recipe - you won't be sorry! - 2/16/09

    Loved the original recipe, but the second time I added 2 T of milled flax seed for extra fiber and omega-3's. We thought that was even better. I put the cinnamon in the batter on accident, and we liked that. I sprinkled about a teaspoon of brown sugar and a little more cinnamon on each one. - 1/30/09

    I've been making these once weekly for a while now. I use them as my "100-calorie" snack instead of buying commercial products. The original recipe is excellent and is very versatile in terms of adding nuts, raisins, flax; and I've even used a banana. The nice thing is they are very filling. - 3/31/09

    great recipe! I added some vanilla extract to the milk and oatmeal along with pumpkin pie spice, blueberries, walnuts and flax seed to the batter. They were delicious. Definitely do not put in paper muffin liners...they do not come off of the paper very well. - 6/14/09

    I added vanilla extract to the soaking oats. I put the cinnamon in the batter and didn't top it with anything else. It was perfect that way. Made quadruple the batch (to freeze for later) and it actually made 60 muffins. Nice filling snack that staves off hunger! - 2/16/09

    I replaced sugar with Splenda brownsugar blend both in and for the top (adding cinnamon and walnut pieces) which gave them a lovely crunchy topping. They only took 15 mins. to bake. You'd never know these are a healthy version of a muffin. Thanks for this great recipe!! - 1/13/09

    I really enjoyed this recipe. It was easy to make and the muffins taste delicious. I made some heart shaped ones in a silicone pan for valentines! The only thing is, mine were DEFINITELY done after 15 minutes! - 2/9/09

    I loved these muffins! So does my 4 year old son, which is unusual. (He usually hates anything remotely healthy.) We used frozen blueberries in place of raisins. And I mistakenly added the cinnamon to the mixture instead of sprinkling on top, and we really liked the result. Thank you for the recipe! - 1/28/09

    I just made these. Fabulous!! I added the sugar and cinnamon to the dry ingredients, also added the oatmeal to the dry. Instead of using just egg whites I used whole eggs. Milk I used 2 %.Will definitely will make again. - 1/16/09

    I also got about 15 (small) muffins out of this, so I only had to bake for about 15 minutes. I added 2 T of flaxseed meal as well. Still, these were very moist and tasted great. The cinnamon sugar mixture on the top gave it just the right touch. Thank you! - 5/19/09

    Tastey recipe. Made some changes, I used whole milk, put the cinnamon and sugar in the batter plus topped each with a touch of cinnamon and brown sugar. Also I did add the raisins it was perfect. I saw the banana suggestion and I will definetly try that next time. This recipe goes in my cook book. - 8/5/09

    This can be a little dry, but I find warming it a bit (10 seconds) in the microwave helps. GREAT with nuts. Be sure to spray or they stick. - 1/12/09

    I tried this recipe this morning. It is awesome. The only thing I changed was that I used organic spelt flour instead of the whole wheat. It turned out great. Hubby and daughter said I can make this anytime. Thanks for the recipe. It will definitely go in my personal cookbook. - 2/13/09

    I made these today thinking they would be all mine because my husband usually doesn't want the stuff I made for healthy eating, I guess the smell of them cooking got to him because he ate three of them.     I love this recipe.I have had it every week for a while now. It is a little chewy, but we ran out of applesauce and made it with an apple cut into tiny pieces instead, and it is incredibly moist and delicious. Just a hint of butter is really good on them too. - 1/27/09

    I love these muffins! I have made them with the brown sugar & the splenda brown sugar blend. Can't tell the difference in taste, just in calories. C&H Brown Sugar=103 & Splend Brown Sugar=93. How did you get 93 with the Brown sugar? After all 10 calories is 10 calories.Will keep making either way. - 7/14/09

    I didn't have old fashioned oats or applesauce, so I used quick oats and chopped an apple in the food processor and it came out just as good. Honestly, I think the texture was actually a bit lighter with the quick oats, and I'll probably just use those from now on! Great recipe! - 6/7/09

    I added mutmeg and flax seed to my recipe. I would have also put banana in it if I had some at home. I also only cooked them for 15 minutes. They tasted really good, just a little on the chewy side though. I guess I stirred the mix a little too much. - 5/28/09

    These were very moist but lacked flavor. I'd recommend putting the cinnamon into the dried ingredients as it didn't work on top. Use sparkling sugar (4t) for a nice crunch. I'll use the base recipe but will jazz it up with spices. Great muffin texture for a minimum amount of calories! - 1/14/09

    This was my first time actually baking a spark recipe. I have hardly ever made anything from scratch, but have always wanted to bake muffins or banana bread.
