Ingredients

    1 lb lean ground beef (93%)
    1/2 cup chopped onion
    1 Old ElPaso enchilada dinner kit
    1/2 cup water
    1 cup fat free sour cream
    1 cup fat free shredded Cheddar Cheese

Directions

Heat oven to 350 degrees. Brown beef and onion; drain. Stir both pouches of enchilada sauce, seasoning mix and water into beef. Heat until hot. In a ungreased 11x7 baking dish, spread 1 cup of the beef mixture in bottom of pan. Cut tortillas in half and put 6 tortillas on top of beef mixture. Spread 1/2 cup of sour cream on top and then top with 1/2 cup of shredded cheese. Add the rest of beef mixture, the other six halves of tortillas and then spread sour cream and cheese. Bake 30 minutes.

    If you are concerned about sodium, you can make your own enchilada sauce using dried ancho chiles. It's actually very easy and you control the salt that goes in, if any.

    I am going to do a makeover of this recipe using corn tortillas (which I prefer), no kit. Should be same carbs but less cals.

    I think I'm going to make this. But since those dinner kits are so unhealthy, I'm considering using homemade taco seasoning and hot sauce. Yum! - 9/10/11

    Very Good
    Very yummy. Didn't use the sour cream because we can't eat it. Wish it were a little lower per serving in sodium. - 4/19/09

    Incredible!
    Made this last night and it was wonderful. The kids had no idea that I used fat free sour cream or reduced fat cheese. Next time I'm going to try this with ground chicken or turkey to see if I can't further reduce the calorie intake :) - 4/10/09
